Grilled pork chops take on a whole new flavor with this recipe invented at the race track as Asian flavors mix with brown sugar to create a sweet and savory twist.

Prep time: 10 minutes + overnight marinate

Cook time: 10-15 minutes (medium)

Ingredients

  • 2 lbs thick-cut pork chops
  • 1/4 c brown sugar
  • 1/4 c soy sauce
  • 1 Tbsp thyme
  • 1 tsp garlic powder
  • Water
  • Butter (for basting)

Begin by cleaning and drying chops, set aside. Combine spices and sugar in a small boiler or microwave safe bowl. Bring to warm temp just enough to incorporate sugar and soy sauce into smooth texture. Add small amounts of water as necessary to keep mixture a marinade instead of syrup.

Place chops into a seal-able container with marinade, turn over several times to completely coat. Marinate overnight under refrigeration. One hour prior to grilling, remove chops from fridge and allow them to come to room temperature.

Grill over high heat to medium (do not cook these well-done). Move to warming rack and baste with a small amount of butter while resting (5-10 minutes). Serve immediately.
