Sweet Potato Casserole w/Bourbon
- 3 c. cooked sweet potatoes*
- 1 c. white sugar
- 1/2 c. butter
- 2/3 c. sweet milk
- 2 eggs, well beaten
- 1 tsp. vanilla
- 2 Tbsp Bourbon
* Using 6 large yams, prick and coat all yams with olive oil and place on a cookie sheet. Sprinkle yams with Kosher salt and roast at 400 for 1 hour. Remove and allow to cool. Cut yams open and scoop out the meat. Mix thoroughly with remaining ingredients and pour into greased baking dish. Refrigerate overnight.
Mix topping on Thanksgiving day using the following ingredients:
- 1 c. brown sugar, packed
- 1 c. pecans, chopped
- 1/3 c. flour
- 1/3 c. softened butter
Mix together on Thanksgiving Day, with a small splash of bourbon, spread on top of sweet potatoes and bake at 350 degrees for 45 minutes.
