This is a super-easy side dish that goes great with any grilled chicken, pork or beef.  We serve this instead of mashed potatoes to have a low-fat alternative.


  • B-Sized Red Skin Potatoes (2 per person)
  • 2 TBSP Extra Virgin Olive Oil
  • 1 TBSP Crushed Rosemary
  • 1 Tsp Kosher Salt
  • 1 Tsp Cracked Black Pepper


Preheat oven to 400

Half and quarter potatoes, place in mixing bowl with oil and spices.  Turn over until well coated and spices are even.

Turn out onto cookie sheet (greased) and bake at 400 until tender (turning every 10 minutes)
