Mashed Potatoes

  • 6 large russet or 10 medium Yukon Gold potatoes
  • 1 can evaporated milk
  • 1 stick salted butter
  • Salt and Pepper to taste
  • Chive if desired

Without peeling, cover potatoes with plastic wrap and cook potatoes in the microwave until tender (yes, the microwave), remove and peel under cold water. Warm evaprated milk and butter in boiler. Place peeled potatoes into a large boiler and mash with milk and butter. Add salt and pepper to taste. Add Chives last if desired. If making ahead of time, add more milk than is necessary as potatoes will thicken over time.
